DAIZ Inc. is an innovative Japanese plant-based meat ingredient manufacturer which has great potential to provide solutions for a variety of plant-based products. We develop and manufacture "Miracle Meat", the first plant-based textured protein made from germinated beans. DAIZ’s patented technology (Ochiai-style Germination Method / OGM) allows to increase the number of free amino acids in the germination process of beans and reduce the beany off-note at the same time. By controlling the amino acid content with OGM, we have succeeded in producing plant-based textured protein with amino acid and flavor profiles similar to those of meat. They can be used not only for plant-based meat applications but also for many other applications such as plant-based milk, plant-based eggs etc. During the manufacturing process, no need for additives, and no waste comes out. This unique Miracle Meat is a new, sustainable, eco-friendly ingredient which can be a breakthrough in the plant-based food industry.
